I cannot recommend the School for International Training's programs enough. (www.worldlearning.org) They have two programs in Ghana, one based in Accra. I did the other, based in Cape Coast (History & Cultures of the African Diaspora). Although we were technically based in Cape Coast, the program itself included a great deal of travel. You spend most of the program living with a host family and in the final month you are sent off on your own to work on your Independent Study Project. Your ISP is a 30-40 page research paper but the important part is that the program essentially hands you a little pocket money and sends you off into your country and asks that your return in a month (though they are available for those who prefer more guidance). While I have a strong preference for the program that I did (I learned more in that semester than my entire college experience in DC) all of SIT's programs are structured that way anybody looking for an immersion experience out of their study abroad should look at it. They have programs all over Africa.

Loved this line, "Convinced that a single bite from a mossie would land me strapped to a rusty IV in a dingy open-air hospital, I wasn't taking any chances." Oh the horror; I got scared just reading it.
